Taco Salad The basics: A can of black beans and salad greens, spinach is our favorite choice.
Add any or all of the following: Jalapenos peppers, chopped onions, chopped green peppers, grated jack cheese, black olives, chopped cilantro, cooked ground beef.
The dressing: mix equal parts salsa and plain yogurt.
Toss everything together and serve with corn chips.
Sweet Peas and pasta with goat cheese The basics: Frozen peas, pasta, goat cheese, chopped fresh mint or basil, olive oil and chopped garlic.
Optional Additions: Chicken or Shrimp, lemon zest
Cook pasta. In a large sauté pan, add 2-3 tablespoons of olive oil, chopped garlic (3-5 cloves) and chicken or shrimp (optional). Cook over medium heat until done, be sure not to brown the garlic. Add peas and cook for about 2 minutes. Toss with cooked pasta. Add goat cheese and chopped fresh mint or basil, more olive oil if desired and give a quick stir.
Serve with a salad.
Otto’s Quick Ham and Red Cabbage Dinner The basics: Oscar’s Smokehouse bacon, a couple of thick slices of ham from the deli, horseradish and a jar of red cabbage.
Fry up the bacon, crumple it into the red cabbage and cook over medium heat. In a frying pan, quickly heat the ham. Spread horseradish on the ham and serve with the cabbage.
Goes great with Pierogies (in our freezer section). Don’t forget the sour cream!
