Baguette rounds, sliced on the diagonal.
Toast on both sides of the bread.
Brush olive oil on top half of the round.

On each round, put a slice of pancetta, a nice slice of a persimmon. Add a drizzle of good quality olive oil, several grinds of black pepper.
