Though I’ve yet to win a cook-off with this recipe, I think it’s the best. Dad would agree, of course, as it’s Bauma’s recipe.
Plan two days for the cooking. Cover a 1 pound package of red beans with cold water, bring to a boil, turn down hear and simmer the beans slowly for 5 to 6 hours.
Fry 1 pound of ground beef with one large onion, chopped, and about 4 big cloves of garlic, chopped coarsely, until the redness of the meat is gone. Add 2 big tablespoons of whole cumin seed, 1 small can of tomato sauce, and 2 tablespoons of good chili powder (or more according to taste) to the meat. Add this to the beans, leaving the beans in the cooking water. Add salt and pepper to taste. Simmer slowly for an hour. Let sit overnight, then skim off any fat, and simmer, the longer the better.
(My addition is strong coffee, left over from the breakfast pot)
